HOMEMADE SPECULOOS AKA COOKIE BUTTER


I know its Christmas and its the season to be jolly and all of that but I just have to vent about something that bugs me. Dont you hate when people say 'no offence' or 'I don't meant to be rude but' right before they say something offensive? Just because you say no offence does or put a disclaimer before whatever inappropriate thing you are about to say does not mean its not offensive or rude!!!!!

How about this, the next time you say no offence or (insert any other ridiculous disclaimer), just stop there and say nothing. Yes, yes I know most of you are thinking won't it be weird to leave the sentence incomplete and just hanging? It probably would be but this way we can be sure no one is offended and its better that people think you cannot construct a full sentence than that you are rude. Trust me on this, its better .................. and exhale

Now if you have done this and need to be forgiven, homemade speculoos makes an awesome Christmas gift; believe me you will be forgiven as soon as they taste it (unless what you said was really mean in which case still make it but forgiveness is not guaranteed) Even if you've offended no one, make speculoos and give someone for Christmas, they will love you for it but make sure you double the recipe so you can keep a jar for yourself as well. 

For those that don't know, speculoos is a spread made out of lotus biscuits (in the picture at the beginning of this post) which have warm spices such as cinnamon, cloves, nutmeg, ginger and cardamom making it perfect for this time of year. With only 5 ingredients, this recipe which is originally from here is super easy, super quick and tastes delicious. Enjoy it just as you would nutella, on toast, on pancakes or straight out of the jar , yum!

HOME MADE SPECULOOS AKA COOKIE BUTTER

Ingredients
200 g  lotus biscuits
34g dark brown sugar
120ml coconut cream
20g trex or crisco melted (or any other vegetable shortening)
1.5 tsp lemon juice

Directions 
Place the biscuits and the sugar in a food processor and blitz them into fine crumbs. 


Add in the coconut milk and process until the mixture making sure that all the crumbs are properly mixed in


Stream in the melted shortening and the lemon juice and blend until the mixture is smooth and creamy.


Please resist the urge to plant your face in this mixture, its really messy.



Pour into a jar and store in refrigerator for up to 2 months.
